*Recipe and blurb from my book- You’ll Eat It & Youll Like It Available now! Ranch Chicken Fingers Chicken fingers, and kids meals are pretty synonymous. That’s why every restaurant in the world has them on their kids menu. They’re a sure thing, and when it comes to kids and food, we love assure thing. You know what else is a sure thing? The fact that kids love ranch dressing. But we are not just going to be dipping these babies in ranch, oh no, we are putting the ranch inside the fucking chicken fingers! every bite is infused with the worlds most delicious seasoning! Can you think of anything better? I mean, your bite-size beasts, making dinner for you every once in a while would be pretty incredible, but we are not that delusional. What goes in it? 3 tbsp of ranch dust seasoning or store-bought 3 to 4 boneless skinless chicken breast cut into strips Two eggs 3 tbsp of all purpose, flour 1 tbsp of Dijon mustard 2 cups of Panko breadcrumbs 2 tbsp of grated Parmesan cheese 1 tsp smoked paprika 1 tsp of salt 2 tbsp of olive oil How You Make It Preheat oven to 375°F. Sliced chicken breast into long chicken finger licking strips. Don’t actually lick your fingers right now, that would be really gross. You really want to try and get them as close to uniform as possible, so they cook evenly. Place the flour by itself in a shallow dish. Now, in a bowl, combine eggs, and Dijon mustard, then whisk together until combined. In a third separate and shallow dish combined breadcrumbs, ranch, dust, Parmesan, paprika, and salt, and mixed together. Take one of your chicken strips and dip it into the flower, then the egg mixture, then the breadcrumb mixture. Your hands are going to get messy here, so just embrace it. Make sure you fully coat both sides of the chicken strip by pressing it into the breadcrumbs. Take out all your frustration about the fact that your son has not emptied his lunch bag in two days out right here, people. This is dinner prep plus therapy. And it works. Repeat this process with all the chicken strips. Next, lay them out on parchment lined baking sheets. Give them a little drizzle with your favorite oil, then toss in the oven for 15 mins. Flip then cook another 10 mins
