eggplant lasagna!!! 🤤🍆🥩🌿🧀 (recipe below) ingredients: 1 lb ground beef 3 large eggplants, thinly sliced 28oz crushed tomatoes 1 onion, diced 3 cloves garlic, minced 1 tsp dried oregano 1 tsp red pepper flakes 1 tsp dried basil salt and pepper to taste olive oil bechamel- 4 Tbsp butter 4 Tbsp flour 2 cups milk salt and pepper to taste pinch nutmeg 1. Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes. Add ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. 2. Stir in crushed tomatoes, dried oregano, dried basil, salt, and pepper. Simmer the sauce for about 10-15 minutes, stirring occasionally, until it thickens slightly. Remove from heat and set aside. 3. In a medium skillet, heat a little olive oil over medium-high heat. Add the eggplant slices in batches and cook for about 2-3 minutes per side, or until golden brown and tender. Remove from skillet and set aside. 4. In a medium saucepan, melt butter over medium heat. Once melted, add flour and whisk constantly for 1-2 minutes to make a roux. Gradually pour in milk while whisking continuously to prevent lumps from forming. Cook the sauce, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes. Season with salt, pepper, and a pinch of nutmeg. Remove from heat and set aside. 5. Preheat the oven to 375°F (190°C). Layer the eggplant slices, sauce, and cheese in a baking dish. pour the bechamel over the top and sprinkle with more cheese.
