This Vanilla Cheesecake is such a beautiful dessert to your Eid table, and the most challenging part is leaving it to set! Base: 150g melted butter 300g crunchy biscuits Crush the biscuits and add in the melted butter. Mix until combined. Add to a greased dish (20cm springform cake pan) and press down firmly till level; push the biscuit base to the sides as well using a small cup or your hands. Bake for 10min at 180 degrees. Cool in the fridge. Filling: 250g Lancewood Full Fat Cream Cheese 250g Lancewood Mascarpone Cheese 250ml fresh cream 120g icing sugar 1 tsp good quality vanilla extract Whisk the above together until thick and smooth. Be careful not to overbeat the mixture. Pour into the cooled base and leave to set for 8 hours, preferably overnight. Toppings: 250g Mascarpone 125ml fresh cream Whip together till fluffy and pipe on top of cheesecake. Decorate with chopped pistachios and dried rose petals. Slide a flat knife around the sides of the cheesecake. Lift the cheesecake from the pan base and gently transfer to a serving dish.
