My favorite soy recipes 😇👇 Whipped tofu RECIPE (4 servings, 10min prep time): -250g firm tofu -2 Tsp oil -4 Tsp maple syrup -juice and zest of 1/2 lemon -1 Tsp vanilla -2 to 3 Tbsp water Blend until smooth. Use on toast as dip. It’ll last in the fridge up to 4-5 days. Tofu balls RECIPE (3 servings, 25min prep time): -1 block (200g) firm tofu, crumbled -1 small, finely diced onion -a handful cilantro, chopped -a handful mint, chopped -a thumbsize piece of ginger, chopped -2 proper Tbsp tomato paste -3 to 4 Tbsp flour (chickpea flour for the gf version) -salt to taste Mash and combine. Shape into 8-10balls. Fry in oil until golden brown and then bake at 175Celsius/350Fahrenheit for 15min Chocolate mousse RECIPE (6 servings, 10min prep time): -400g silken tofu -200g melted dark chocolate (most of them are vegan) -1 sachet vanilla sugar (optional) Blend until smooth. Fill in ramekins and refrigerate at least 3h. Butter tofu (recipe in my cookbook) Korean inspired smash tacos RECIPE (6 tacos, 30min prep time): -150g soy chunks -2 Tbsp soy sauce -1 3/4 Cup (450ml) water -1 Tsp each salt, cumin, paprika -1/2 Tsp garlic powder, ginger powder Cook until the water is gone (about 5-10mins). -2/3 cup (100g) chickpea flour Stir everything in and set aside while making the sauces. Press some of the mixture on each tortillas and fry in some oil for a few minutes. Spicy mayo: -1/2 cup (125g) vegan mayonnaise -1 Tbsp gochujang -optional: a squeeze of lime Else: -kimchi -cilantro -6 small tortillas
