✨ very green millet salad with herbs✨ Ingredients: Millet: 1 cup millet 1 tbsp vegetable broth Salad: 2-3 snack cucumbers, sliced thinly 3 stalks celery, diced 1 bunch spring onions (only the dark green ends), finely chopped 1 handful arugula 1 handful baby spinach 1 medium zucchini, sliced thinly Some herb oil Salt and pepper to taste 1 garlic clove, finely chopped 1 handful flat-leaf parsley, finely chopped 1 handful dill, finely chopped 1 handful fresh mint, finely chopped 1 handful chives 2 tbsp small capers Dressing: 3 tbsp herb oil Juice and zest of 1 lime 1 tsp agave syrup or honey 2 tbsp white wine vinegar Instructions: Cook the millet in a pot with vegetable broth until it's done. This usually takes about 15-20 minutes. Then let the millet cool. Meanwhile, slice celery thinly, dice cucumbers, chop spring onions and chives, roughly chop arugula and herbs, and dice the zucchini. Place all salad ingredients except for the zucchini in a large bowl. In a pan, sauté the zucchini cubes in herb oil, salt, pepper, and crushed garlic clove over high heat until golden brown. Once done, set aside and let cool. For the dressing, mix all ingredients well. Taste and adjust seasoning with salt and pepper if needed. Mix the cooled millet with the dressing and let it sit for a while. Then add it to the prepared salad.
