Creamy Sundried Tomato Shrimp & Rice ๐ฎโ๐จ๐ค๐
I have a tutorial up on one pan dinners on my page - this is very similar if you want a follow along recipe! 1/2lb wild caught shrimp (frozen- I get mine at @sprouts) Seasoning of choice! I seasoned my shrimp with @spikeseasoning 1 cup jasmine rice 1 tsp ghee (or butter, olive oil, etc) 1/2 cup white wine 1 cup milk of choice 1 wedge laughing cow cheese 1/2 cup sundried tomatoes Optional- add more veggies like spinach, minced garlic, mushrooms, etc. Iโm just using what I had. First, thaw the frozen shrimp by running them under cold water for 5 mins in a strainer. Then pat dry and season well. Add shrimp to a pan on medium heat with 1 tsp ghee. Cook shrimp completely & set aside. In the same pan, add in chopped sundried tomatoes and 1/2 cup white wine (or chicken broth). Reduce until sauce thickens and alcohol evaporates. Add in 1 wedge of laughing cow cheese (or 1-2 tbsp cream cheese, Parmesan, etc) and stir in. Once mixed, add in 1 cup milk, 1 cup water and 1 cup rinsed Jasmine rice. Cover and let simmer for 15-20 mins. Add the cooked shrimp back in for the last 5 mins to warm up in the rice.
