Monday- it’s just another day. Make some toast. Ingredients Handful of shiitake mushrooms, sliced 2 anchovy fillets 1/2 shallot, finely diced 1 garlic clove, minced Fresno chili sliced (amount depends on your spice level) 2 eggs, scrambled Olive oil small pinch of salt and pepper to taste (remember that anchovies are already salty) Soy sauce is also a good idea here 1/2 avocado sliced Pinch of cilantro for garnish squeeze of lime chili oil drizzle @flybyjing Sourdough toast, lightly buttered and pan fried Method: Begin by tossing’ your shroomies into some olive oil on medium high heat. Sauté them around until they get some color and some crunchy bits then lower the heat to medium and add just a touch more olive oil. Melt in some Anchovies throw in your shallots and garlic. Sauté until softened then scramble in your eggs. If you’re feeling spicy, add some Fresno chili, jalapeño or Serrano. While you slice your avocado, toast up some lightly buttered bread. Top that bread off with your avocado, Eggs a quick little squirt of lime, cilantro and your favorite chili oil. I used Fly By Jing’s ‘Zhong Sauce’ @flybyjing - Enjoy
