Cosy days baking with my girl 🤗 Ingredients: 200g unsalted butter, softened 200g caster sugar 3 medium free range eggs 2 tsp vanilla extract 200g self raising flower 2 tbsp milk For the icing: 160g unsalted butter, softened 300g icing sugar 1 tsp vanilla extract Method: Preheat your oven to 180°C fan. Line your 12-hole cupcake tin with cases. Add the butter and sugar into your mixing bowl and beat for 2-3 minutes until pale and fluffy. Add your eggs one at a time, beating well after each egg. Add the vanilla extract and beat briefly to combine. Fold in the flour gradually and gently. Add your milk to make your batter smooth so it easily drops off your spoon. Divide your batter between the cases and bake for 25 minutes. You will know when they are cooked by inserting a cocktail stick into the middle and it coming out clean. Transfer your cakes to a wire rack to cool down completely before decorating. Once cooled, make the buttercream icing. Put all your ingredients into a large mixing bowl and beat until pale and fluffy.
