It was nearly 100 miles of no resources. We had pre buried food and water along our route so that we wouldn’t end up in a sticky situation. Even with that preparation we still barely had enough water. Vern will go down in history! We had a casualty 🩸 but it waited until the end 🤣 Butternut Squash Risotto by @minimalistbaker one of our new favorites !! You can find the recipe (ingredient list) and complete cooking instructions on @minimalistbaker website by typing in “butternut squash risotto” It’s really pretty easy to make just takes a bit to stand and stir the broth into the rice. It tastes like a fancy meal though and is so filling it’s perfect on the days you want a big meal out to eat. Make it yourself! I use the dairy free Parmesan from @traderjoes and Sauvignon Blanc for the white wine (just a cheap bottle from Costco because I’m not a white wine girly) Hope this brings a little entertainment to your day 🤩 Also add plant based or not plant based sausage for an extra zing !! We didn’t have pine nuts or sage on the top and it still tasted delicious!
