Ingredients: 9-10 medium new white potatoes Olive oil 8 garlic cloves, chopped 2 Tbsp fresh rosemary, chopped Onion salt from TJ's (optional) 2 Tbsp grass-fed butter, cut into small squares Parmesan cheese, cut into thin squares Grass-fed cheddar cheese, cut into thin squares *Optional Greek yogurt or sour cream to garnish Method: Wash potatoes and thinly slice on a mandolin Add slices to a large bowl, drizzle olive oil, add garlic, rosemary, and onion salt (if using) and toss to coat. Arrange slices in a dish, then insert butter squares and cheese slices throughout the dish.
