This Vegan Sausage Gnocchi will convert even your most reluctant friends to try plant-based food! This creamy, hearty, pillowy dish is the perfect combination of flavours that will hit your palette in every direction. Plus with the inclusion of the vegan sausage, you get the texture difference to counteract the softness of the gnocchi. The result being one of my favourite dishes to make. Simple and yet divinely inspired. Instructions: Ingredients 2 tbsp olive oil 1 small yellow onion, chopped 3 garlic cloves, minced 1 lb #yvesvegetarian talian veggie sausage, crumbled with your hands 1 (14 oz) can diced tomatoes ¼ cup vegetable broth 1 (16 oz) package potato gnocchi 3 cups fresh spinach leaves ¼ tsp black pepper Sea salt, to taste ½ cup vegan cheese of choice, I like vegan parmesan In a large skillet, heat olive oil over medium high heat. Add onion and garlic and sauté until fragrant, about 1 min. Add crumbled sausage and cook for 1 minute. Add tomatoes, vegetable broth, and uncooked gnocchi, cover and cook on medium heat for 5 min. Remove from heat, add spinach and black pepper and stir until spinach is wilted. Taste and season with salt to taste. Sprinkle with vegan cheese of choice, if using, and cover for 3-5 mins to melt cheese.
