Chipotle Chicken Burrito Bowls ππ Ingredients/method: 1. Cut up and put in slow cooker: 1750g chicken breast 2. put the following ingredients into a blender cup and blend into a sauce and then pour into slow cooker: 240ml orange juice 420g chipotle sauce (La Costena) 3tbs light soy sauce 2tbs apple cider vinegar 2tbs minced garlic 2tsp cumin 1.5tsp black pepper 2tsp onion powder 80g honey 1tbs olive oil Handful of coriander stems *Blend the above* 3. Put slow cooker on HIGH for 2-3 hours or LOW for 3-4 hours. Give it a stir half way through 4. Cook rice and prepare pico de gallo: 420g basmati rice (dry weight) Pico de gallo: Tomatoes x 4 Onion x 1 Fresh jalapeΓ±o x 1 Fresh lime x 1 Salt & pepper (optional) 5.
