Afghani Malai Chaap๐ฉ๐ปโ๐ณ โข - Ingredients: Soya Chaap - 200 gms Salt - 1/2 tsp Freshly crushed Black Pepper - 1/4 tsp Oil - 3 tosp Cumin Seeds - 1/4 tsp Coriander Powder - 1 tsp Ginger Chilli Paste - 1 tsp Cinnamon - 1/2 inch Grounded Masala (Clove-2, Black Pepper-10-12, Big Cardamom 1) Bay Leaf - 1 Curd - 1/2 cup Cashews - 12-15 Salt - a little less than 1/2 teaspoon Malai or cream - 2 tbsp Chopped Coriander leaves ๐๐ป For smoky flavour 1small piece of coal or cinnamon stick ๐๐ป cut the chaap into ยฝ inch pieces. Place them on a plate and add ยฝ tsp of salt and ยผ tsp of ground black pepper. Mix well and keep for 5 minutes. ๐๐ปMeanwhile, coarsely ground 1 peeled large cardamom, 10-12 black pepper and 2 cloves and keep aside. Now heat oil in a pan and fry the chaap pieces until golden brown from all sides. ๐๐ปNow in a same pan add oil and add bay leaf, cumin seeds, cinnamon, grounded spices and 1 tsp of green chilli ginger paste. Then add 1 tsp of coriander powder and mix well. ๐๐ปNow turn off the flame and add a paste of ยฝ cup of fresh curd and 12-15 cashew nuts. Mix them well, turn on the flame and stir fry continuously on low flame till the oil separates. When oil separates, add 2 top of cream, stir fry continuously till oil separates. ๐๐ปNow add 2 cups of water and cook till it boils. Then add ยฝ tsp of salt or as per taste kasuri methi and finely chopped coriander leaves and mix well. Then add fried soya chaap pieces and mix well. ๐๐ปNow cover them and cook on low flame for 10 minutes. Afghani Soya chaap is ready. ๐๐ปAnd if you want a smoky flavour You can burn a small piece of charcoal or cinnamon stick on the stove and place it in a small katori abd put inside the pan pour some ghee over the coal.
