CAVA AT HOME MEAL PREP Corn Salad: (mix together the following) -1 can roasted corn, drained -1 cup cherry tomatoes, cut in half -1 cup English cucumber, cut into fourths -Salt, pepper, & garlic powder -2-3 tbsp avocado oil Brown rice: -Cook 1 cup of brown rice according to package, it will make 2 cups and add 1/2 cup to each meal prep container 5 boneless skinless chicken thighs: - season with: - 1/2 tbsp Cumin - 1/2 tbsp Garlic - 1/2 tbsp Lemon pepper - 1/2 tsp Cayenne - 1/2 tbsp Paprika - 1/4 tsp cinnamon - 1/2 tbsp Chili powder - 1/4 tsp Salt - Bake in oven 425 for 25 minutes! Hummus: Blend tougher the following in a food processor: - 1 can chickpeas, drained and rinsed - 1 cloves garlic - 2 tbsp olive oil - 1 small ice cube (sounds weird I know) - Juice from 1 lemon - 1/3 cup tahini - 1/2 tsp cumin - 1/2 tsp sea salt Assemble four meal prep containers with chicken, brown rice, and corn salad. Serve with homemade hummus! I microwave this for 40 seconds to heat it up a bit but not make the cucumbers and tomatoes too warm. You could also eat this cold!
