Light and healthy tacos with tabbouleh đź Ingredients: 1.25 lb ground beef 2 med onions (chopped and split in half) 2 tbsp homemade taco seasoning 5 cups parsley 2 cups tomatoes chopped 1/2 cup onions 2 large lemons 4 tbsp extra virgin olive oil (split in half) 1/3 cup bulgar (omit if doing keto, paleo or going carb free) 1 tbsp dried mint 1/2 tbsp Aleppo pepper Salt to taste Recipe: -sautĂ© half the onions in 2 tablespoons of EVOO until translucent -add taco seasoning (I made my ownâŠlet me know if you want the recipe) and mix well then add ground beef and brown until fully cooked. Set aside -for the tabbouleh: in a mixing bowl place parsley, tomatoes, onions, bulgar, Aleppo pepper, mint, lemon, salt and 2-3 tablespoons of EVOO. Mix well -if youâre going carb free, use a lettuce, pepper or jicama for your âtortillasâ. Layer the meat then the tabbouleh. Enjoy!
