Make my version of avacado toast with me. I promise you will want more than one! 🥑 Recipe: 🍳Ingredients 2 large avacados 2 eggs poached 2 whole grain toast 1/2 red onion chopped 3 green chilies or jalapeños chopped 1 lemon squeezed 1 small lime squeezed 3 TBPS crushed candied pecans Tortilla chips 1/2 TSP red chilli powder 2-3 TBSP extra virgin olive oil 1 TBSP butter 4 TBSP fresh chopped cilantro Salt and pepper to taste Method: 🥑 In a saucepan, add water and a splash of vinegar and bring to a simmer. Crack the eggs in a strainer and place the strained eggs in a ladle. Slowly lower the ladle at an angle and release the eggs into the simmering water for about 4 minutes and remove. In a bowl, combine the avacados, onion, green chillies, cilantro, pecans and the juice of the lemon and lime along with all the spices mentioned in the ingredients. Mash and mix everything together with a fork. Toast some bread in a pan with butter and spread the avacado mixture generously onto the toasted bread. Layer with some whole grain tortilla chips and with a little more of the avacado spread and then top it off with the poached eggs and sprinkle of everything bagel seasoning along with red chili flakes.
