Paleo pecan and almond crusted cod! 🤤 full recipe below Ingredients: •cod •coconut aminos •orange squeeze •almond flour •crushed pecans •sriracha •mayo (primal kitchen or chosen foods) •garlic powder •onion powder •salt/pepper •olive or avocado oil •green beans •mushrooms •cauliflower rice •chopped red onions •microgreens •furikake Instructions: •marinate cod in coconut aminos and dash of garlic powder, onion powder, salt and pepper in ziploc for at least 12 hours (24 hours- even better) •then squeeze some fresh orange in and then remove cod from ziploc and dip in almond flour and crushed pecans •mix mayo and sriracha in a bowl, dip cod in that and then dip back in flour mixture one more time •spray parchment paper with olive or avocado oil and then place fish on it and air fry for 10 minutes at 350° F •while that’s cooking, to a large pan on medium heat with olive or avocado oil, add green beans and cook for a few minutes, then add cauliflower rice and mushrooms (and optional- some chopped red onions). Use the rest of your marinade on your veggies for extra flavor! And add salt + pepper Optional: add a little sake for extra flavor and acidity as well Sauté until veggies are cooked to desired level •remove your cod from air fryer, and plate! Garnish with microgreens and furikake and drizzle the rest of your sauce from your fish over everything! Voila - such a yummy and healthy meal!
