High protein lentil black bean tacos! And the filling is meal prep friendly so you can batch cook and make tacos every day! * Dash olive oil in a pan * ½ large onion finely diced * 3 garlic cloves minced * 1 tsp each chili powder, ground cumin, smoked paprika * 1 can black beans drained & rinsed * 1 can cooked green lentils drained & rinsed * ½ cup veggie stock or water * 2 tbsp fresh lime juice * 4 mini tortillas * Vegan cheese 1. Add the onion and garlic to a pre heated lightly oiled pan and cook until softened 2. Add in spices , black Beans and lentils and combine 3. Add stock and lime and allow to simmer for 5-10 minutes 4. Microwave your tortillas for 10 seconds so they don’t rip when folding 5. Add vegan cheese, your lentil mix, more cheese and fold in half 6. Bake for 12 minutes at 180 degrees 7.
