Come on now we bout to braise some short ribs! Yes, I still feed the wife even after she tortures me lol Braised Short Rib 4-6 beef short ribs 1-2 marrow bones, optional 2 tbsp olive oil 1 garlic head, halved 2 shallots 2 celery ribs 2 carrots 2 tbsp coarse dijon mustard 2 cups dry red wine 24oz beef stock/broth 1 bunch of thyme, 4-6 sprigs 2 bay leaves Salt Pepper 2 tablespoons butter 2 tablespoons flour Generously season short ribs with salt and pepper, set aside. Chop carrots, shallots, celery. Put olive oil in pot sear your short ribs and bones. Once browned remove and add the vegetables you just cut. Cook down until they begin to soften and brown. Add red win and scrape the bottom of pan. Add short ribs, garlic, thyme, bay leaves, and mustard. Cover with beef stock. Bake in the oven covered for 2 hours on 375 or until short rib is easily shredded. Once completed remove the short ribs and set aside. Strain the braising liquid and set aside. Add flour and butter together and whisk until smooth and combined. Whisk in braising liquid to form gravy. Cook on medium low until thickened.
