The older I get, the more I crave my childhood favorite foods. That aroma in the air takes me back. This Moong Daal Salan (Split Moong Bean curry) is definitely one of those. With homemade roti smothered with ghee knocks it out of the park. Ingredients: 3 cups moong daal 1 medium sliced onion 1 tbsp crushed ginger 1 tbsp crushed garlic 2 sliced tomatoes 1 1/2 tbsp salt 1 tsp turmeric powder 1 tsp chili powder 1 tbsp cumin powder 1 tbsp coriander powder 3 tbsp ghee 1 tbsp cumin seeds 3-4 dried whole red chili Chopped cilantro for garnish Instructions: Wash and soak moong daal. Set it aside for 30 minutes. In a pan, pour oil and once hot add sliced onion. Once soften, add garlic and ginger. Mix for 2-3 minutes. Then go tomatoes to the mix. Cover and let it soften for 10 minutes. Now add the spices and after mixing it well add half a cup of water and cover on medium low heat for 10 minutes. Uncover and stir. Gently break it with a wooden spoon so it becomes a paste. Time to add the main ingredient. Drain all the water from the lentils and add it to the pan. Mix and add cup of water and let it cook on slow simmer for 20 minutes. Once completely cooked, carefully add in the “tarka” made of ghee, cumin seeds and dry while chilies.
