Rigatoni Alla Tequila š„«š„ Ingredients: Well.. kinda.. I forgot to write them down so this is a rough outline.. as it should be. Taste as you go and trust your tongue. 1/2 small onion 5oz chorizo 2 garlic cloves 1 Tbsp olive oil 3tbsp tomato paste 2oz. Tequila Pinch mexican oregano Calabrian chili paste to taste Heavy cream to taste Salt & pepper to taste Cotija cheese garnish 2oz butter rigatoni Method: Begin by cooking through your chorizo (Iād recommend my recipe š) with a bit of olive oil. Sweat your diced onion with the chorizo and grate in your garlic. Once softened, add your Calabrian chili and tomato paste. Cook through for at least one minute. Deglaze with tequila then add Mexican Oregano. Boil your pasta. SautĆ© for a minute then add your cream until you get your desired color. Once desired color is achieved, thin out your sauce with pasta water and let simmer for a sec, taste and adjust for salt and pepper. Once your tongue is happy, toss in some cold butter until glossy then add your rigatoni and toss. Serve with Cotija cheese and enjoy š #rigatoni #pasta
