♥️red velvet cupcakes w/cream cheese frosting♥️ *makes 12 cupcakes Ingredients for the cupcakes: - 1 3/4 cup cake flour - 3/4 cup granulated sugar - 1 Tbsp cocoa powder - 1/2 tsp baking soda - Pinch of salt - 1 egg - 3/4 cup vegetable oil - 3/4 cup whole milk - 1 tsp white vinegar - 1 1/2 tsp vanilla extract - 1 Tbsp red food coloring Ingredients for the frosting: - 4 oz cream cheese, at room temp - 1/2 cup unsalted butter, at room temp - 1 Tbsp heavy whipping cream or milk - 2 tsp vanilla extract - 2 1/2 cups powdered sugar - bake at 350 degrees Fahrenheit for 18min or until toothpick inserted in center comes out clean Directions: 1. Preheat oven to 350 degrees Fahrenheit. 2. Mix the white vinegar with the milk and let sit for 5min. 3. In a bowl, whisk together the cake flour, baking soda, cocoa powder, and salt. Set aside. 4. In a separate large bowl, combine the oil, egg, sugar, milk/vinegar mixture, and vanilla extract. Add in the food coloring and mix until combined. 5. Mix in the dry ingredients until you have a smooth batter. 6. Line a cupcake tin with liners and fill each liner 3/4 of the way with batter. Place in the oven for 18 minutes or until a toothpick inserted in the center comes out clean. Let cupcakes cool completely on a cooling rack. 7. Make the frosting: using a hand/stand mixer, beat the butter and cream cheese for 3min on med-high speed. Add in the powdered sugar, vanilla, and heaving whipping cream and mix on high for 4min until fluffy. 8. Frost the cooled cupcakes. 9.
