Double Smoked Ham with Apple Cherry Habanero Bourbon Glaze. Full recipe with video in the comments. I started out with a spiral sliced ham and sprayed it with Duck Fat spray as a binder then seasoned heavily with our Honey Bacon BBQ. I smoked it at 250° with post oak for 3.5 hours. I mixed the following and heated to make a glaze that I started basting every 15 minutes at 110°. Glaze 1 1/3 C, light brown sugar 4 T of cherry preserves 2 oz Texas Pepper Jelly Apple Cherry Habanero Rib Candy 2 oz clover honey 2 oz your fav bourbon I pulled the ham at 140°.
