Before you roll up your lamb, shave down the lamb fat so it's not so thick & score the lamb fat so it helps render through the cooking process. 🔸️ Pin 📌 your Lamb! The lamb cutlet side is attached to the bone. The flap side that is rolled needs to be secured to the cutlet! I use poultry pins. You can use wooden skewers. 🔸️ Lamb bones burn! For the best presentation, wrap the lamb bones in foil to protect them from burning. I'm now reconsidering my Christmas menu.
