Water Pinch of Salt Pecans (optional) Add sugar, syrup, water, and a pinch of salt to a saucepan mix and bring to a hard ball stage(260°F). Once it boils DO NOT STIR! While sugar mixture comes to temp line a baking sheet with wax paper. Next whip egg white til stiff peaks either with hand mixer or stand mixer. Slowly pour hot sugar into whipped egg white while mixer is on high in a slow stream. Continue to beat for 5-7 minutes until it loses the glossy shine. Use greased cookie scoop or spoons and scoop onto your pan. Top w/toasted pecans. Allow the candy to dry for 1 hour before eating. Store at room temp in airtight container for 2 weeks 😁 The recipe above is a small batch great for anytime (makes 12)
