Potato Bread 1 Potato (medium size) 2 C. Water 3 1/2 C. Flour 1 TBS. Active Dry Yeast 1 TBS. Sugar 1 TBS. Shortening 2 tsp. Salt Peel, chop, and boil potatoes in 2 cups of water til fork tender about 12 minutes. DO NOT DRAIN. Add 1/4 cup of warm potato water to a large bowl and sprinkle yeast into water. Let bloom for 5 minutes. Mash potatoes with the remaining water. Add mashed potatoes, sugar, salt, shortening, and 1 cup of the flour to the yeast mixture. Using a mixer on low mix until combined, then on high speed mix for 3 more minutes. Now mix in remaining flour 1 cup at a time until you’ve mixed in 3 cups total. Turn dough out onto a clean and floured work area. Knead dough for 5-8 minutes adding 1/2 cup more of flour as kneading. When dough is smooth and is moderately stiff place in a lightly greased bowl, cover and let rise for 1 hour. After dough has doubled in size turn out again and form into a loaf by stretching dough out to a long rectangle and rolling up dough and putting into a lightly greased loaf pan. Cover loaf and let rise another 30 minutes. Once loaf has risen brush water over top and sprinkle with flour. Bake for 45 minutes at 375°F. Remove potato bread from pan and let cool completely before slicing. Store in airtight container for 5-7 days.
