This is the perfect weather to be making yourself Lasagna soup 🍜 🫶 Lasagna Soup (serves 2) 430 cal - 18.5g carbs - 29.5g protein - 10g sugar - 7.5g fibre - 30g fat Ingredients: - 1 pack Eat Water Lasagna - 1 tbsp olive oil - 1 medium carrot chopped finely - 3 celery sticks chopped finely - 500ml chicken stock - 200g ground beef - 2 tbsp tomato paste - 1tsp chopped garlic - 100ml reduced fat cream - 100g Mozzarella cheese - Method: 1. In a deep frying pan heat some olive oil, add garlic, carrot and celery. Cook until the vegetables have softened. 2. Add the beef and brown, add the tomato paste, stock and cook for around 5 minutes. 3. Add the pasta and cream and simmer for further 10 minutes 4. Top with some Mozzarella cheese until it melted 5.
