Comfort Foods Reimagined Episode 1: High Protein Chicken Pot Pie 🍗🥧 For this new series, we’ll be making low calorie, high protein versions of the most indulgent comfort foods. These foods are historically considered to be “unhealthy” or “bad for you”. But with a few simple tweaks, we’ll maintain those classic indulgent flavors, while increasing the protein content and keeping the calories low. Macros per serving ⬇️ 390 calories 35g protein 36g carb 11g fat Prep time: 10 minutes Cook time: 45 minutes Servings: 4 Ingredients ⬇️ Filling ⬇️ 2 tbsp light butter 6 oz mushrooms 1 tsp garlic paste 1 lb shredded chicken breast 2 cups chicken stock 1.5 cups frozen peas and carrots 2 tbsp half and half 2 tbsp flour 1/2 tsp salt 1/2 tsp black pepper 1/2 tsp thyme 1/2 tsp oregano Crust ⬇️ 1 can (224g) reduced fat crescent rolls Egg wash Sprinkle of salt, black pepper, parsley Instructions ⬇️ 1. To a medium heat pan, melt some light butter and sauté mushrooms 2. Once the mushrooms get some browning, add shredded chicken breast (I used rotisserie, but you can also make your own) 3. Add chicken stock, frozen peas/carrots, and spices. 4. Once the peas and carrots soften a bit, add flour and half and half to thicken. 5. Once mixture is at desired consistency, take it off the heat and add to a skillet. 6. Roll out crescent rolls into one giant disk and lay over the mixture. 7. Apply egg wash and bake for about 15 minutes on 400 degrees Fahrenheit (watch closely). 8.
