Crispy smashed potatoes Ingredients: * 1 - 1.2kg medium potatoes (6 - 8) * 1 tbsp salt * olive oil * Salt & black pepper, to taste * Finely chopped parsley (optional garnish) Instructions: * Boil potatoes in salted water: Small for 20-25 min, medium for 30 min, till soft. * Preheat oven to 200°C/390°F (180°C fan). * Drain and dry in colander for 5 min. * Smash on tray with fork/masher: Thin for crispness, thick for fluffiness. * Steam dry 5 more min on tray. * Drizzle with olive oil. Sprinkle salt and pepper. * Bake 45 min (small) to 55 min (medium) till deep gold and crispy. * Serve hot, optionally parsley sprinkle.
