Unstuffed peppers! Gotta love a one pan meal. 1 pounds lean ground beef 1 small white onion, chopped 3 bell peppers (red, yellow, orange) 1 tbs minced garlic 1 cup mushrooms (optional, i just had them and didn’t want them to go bad) 1 16oz can diced tomatoes 1 tsp italian seasoning 1 tsp garlic powder 1/2 tsp cumin powder 1 1/2 cups chicken or beef broth 1 cup long grain rice 1 cups shredded cheddar Instructions * Brown ground beef in a skillet, add all seasonings, onion and diced bell peppers.
* Let that cook until beef is cooked through and peppers/onions have softened.
* Drain any grease from the skillet.
* Add diced tomatoes,, garlic, broth, and uncooked rice.
* Stir well, bring to a quick boil, lower heat to about medium low and cover with a lid.
* Let that cook for about 20 minutes or until the rice is cooked to your liking.
* Top with the cheese.
