Pastrami Beef Cheek Lumpia:Recipe Below w/ Habanero Honey Mustard dipping sauce Brined these alongside the tri-tip I did in a recent video. Iโve made beef cheek lumpiaโs before and these were just as good but Pastrami style. So freakin ๐ฐ _______________________________________ ๐ฝ๐ง๐๐ฃ๐: โข1 1/2 gallons of water โข4-5 lbs of ice โข3 c of Kosher salt โข1 1/2 c white sugar โข2 tbsp pink curing salt โข1 whole garlic, cloves โข1/4 c pickling spice โข1 tbsp coriander seeds โข1 tbsp mustard seeds ๐๐ฃ๐จ๐ฉ๐ง๐ช๐๐ฉ๐๐ค๐ฃ๐จ: โขAdd brine mixture to a pot on medium/low heat and simmer till salts and sugars are dissolved โขIn a @thebriner bucket add ice and brine mixture to cool โขPlace beef cheeks in then into fridge and brine for a week โขRemove from brine and pat dry โขUsed olive oil as a binder then season w/ SPG and insert your @MEATER wireless meat thermometer in and set temp to 205 โขSmoke at 225-250 till you form a good bark 4-6 hrs โขThen in a pan pour in about 2cups of beef broth then place beef cheeks in and cover. Rack is optional I just tried a different method than I normally do to see if it made a difference to try and preserve the bark but it didnโt come out as juicy so mid way I removed the rack to let it braise. โข Cook for another 2-4 hrs until internal temp was 205 or until probe tender. Then let rest for an hour. โขRoll them up in Lumpia wrappers you find at most Asian markets and add some Swiss cheese โขIn my @HexClad pot w/ peanut oil at 350 degrees fry lumpia for 1-2 mins until golden brown โขServe w/ whole mustard grain and @Melindaโs Hot Sauce Habanero Honey Mustard pepper sauce โจ๏ธ @Char-Griller Gravity Fed 980 _______________________________________ #lumpia #fingerfood #appetizers #beefcheeks #bbqtiktok
