Dating Dishes Ep. 3: Crispy Pan Seared Salmon The third meal I made for my wife while we were dating was a beautiful pan seared salmon with ultra CRISPY skin! It's a dish she still talks about and one that is very heavily requested! The salmon is nicely seasoned, tender, flakey and the crispy skin ties it all together. Here are a few more key tips to get it perfect every time! Enjoy! 1. Use a NON-STICK pan! A non-stick pan over medium high heat and neutral oil is all you need. Once the fish is cooked about halfway (keep an eye on where the color of the salmon changes), give it a flip and use the hot oil to further crisp the skin! 2. Extracting as much moisture out of the skin initially is KEY for crispy skin. Pat dry with a paper towel and scrape a sharp knife along the skin to further draw out excess water. 3. Cutting the vertical slits in the salmon skin will actually create more surface area and allow the skin to crisp up more effectively. Adding herbs inside will add a bunch of extra flavor, too!
