Patagonian Lamb cooked over Open Fire by a Gaucho (Argentinian Cowboy) is an unique experience. This cook was a few weeks ago, at La Rinconada Ranch in Neuquen Province, Argentine Northern Patagonia. This is one of my favorite places in the world to visit. Atilio , Susi and Willy are outstanding hosts and friends. We have been coming here since my kids were babies and we will keep visiting! Patagonian lamb has characteristics recognised world-wide, being lean, tender and having an exquisite flavour. This is due to extensive rearing in a pure environment of natural pastures. It’s always cooked Asador style for 3 to 4 hours. And I would say the main difference with the normal Lamb is the leanness and the flavor.
