might be the best thing i’ve ever made 😮💨 cumin beef biang biang noodles inspired by xian famous foods Here’s how you can make it: Noodles: Mix together: - 500g AP flour - 250g water - 10g salt - knead, rest, repeat until very soft - roll out into rectangle and slice out 6 portions - cover each piece in oil and let it rest for couple hours! - when ready, roll out a portion - use a chopstick to indent the middle - biang them out - tear through the middle indent - immediately boil til they float - lay some toppings on the noodles - green onion - chinese chili flakes - sichuan peppercorn powder - cumin (if u want that extra goodness) - sesame seeds - salt - minced garlic - pour hot neutral oil over the noodles and mix Cumin beef topping: - Cut steak into thin strips - marinate with - baking soda, soy sauces, cumin, cornstarch, salt, sugar, chinese cooking wine and lastly oil - fry in oil and strain it out - stir fry together - garlic, ginger - onions, chili peppers - green onion - the beef added back in - a spice mix - cumin, chili flakes, sugar, msg, sichuan peppercorn powder - soy sauce, chinese cooking wine - top with cilantro - add onto noodles - slurp that up really put my heart into this one thanks for watching <3 -kenny
