Purple Cauliflower βSushiβ π£ππβ¨ this is one of my favorite ways to eat more cauliflower. Cauliflower is a great source of vitamin K, so I include it whenever I remember :p Purple cauliflower is more antioxidant rich than white cauliflower and itβs full of anthocyanins because of its vibrant color π€© Try out this bite-sized raw vegan delicacy with sriracha hemp mayo π β’ Purple Cauliflower βSushiβ π β’ 1 head of purple cauliflower β’ 1 avocado β’ 4-5 strawberries β’ 1/2 cucumber julienned β’ handful of arugula β’ 1 nori sheet β’ Pulse blend the cauliflower until finely crumbled like cauliflower rice, careful not to over-blend. Put the cauliflower rice into a cheesecloth and stain out the excess juice (I just drink the extra juice ππ). The drier you can get it, the better. Then mash 1/2 avocado and mix it with the cauliflower rice. Then spread the mixture onto a nori sheet like you would regular sushi rice, add julienned cucumber, quartered strawberries, 1/4β thick sliced avocado and arugula and roll it up π£ Slice into 8 equal pieces and enjoy w sriracha mayo β’ Sriracha Hemp Mayo β’ 3/4 cup hemp seeds β’ juice of 1 lemon β’ 2 tbsp vegan sriracha sauce (not raw but itβs ok π) β’ coconut water to desired consistency β’ Blend ingredients until smooth, adding coconut water until you reach a mayo-like consistency.
