Layali Lubnan — In a saucepan, combine 1 litre milk, 1/2 cup caster sugar & 1 cup fine semolina. Whisk to combine & remove any lumps. Place on low heat & continue to stir until mixture thickens. Pour into your chosen dish. Allow to cool at room temp before placing in the fridge to cool completely & set. To top, whisk 2 cups of thickened cream with 2 tablespoons sifted icing sugar. Spread over the semolina pudding. Alternatively, you can top with ashta (clotted cream).
