Line and grease a square baking tin, set aside. Slice marshmallows in half and roughly chop the pistachios. Place chocolate, peanut butter and coconut oil in a saucepan over low heat. Stir gently until melted. 2. In a separate bowl, combine marshmallows, dried cranberries, pistachios and puffed rice, then pour over the melted chocolate and mix well. 3. Transfer rocky road to the prepared tin and spread evenly. Sprinkle with desiccated coconut and dried flowers (if using). Refrigerate for 1 hour, then slice and serve.
