Creamy chorizo and mozzarella pasta! Recipe in caption Chorizo ring peeled and diced Dice an onion and red pepper 3 cloves of garlic finely chopped 1 tbsp tomato puree 300g rigatoni 500ml chicken stock 400g chopped tomatoes 120ml double cream Fresh mozzarella 70g parmesan Peas (optional) Put your chorizo in a cold pan and heat up, itll encourage all the oils out, cook for 5-6 mins then remove, leave the oils in Diced onion for 4-5 mins, add the red pepper and garlic in, 1 tbsp tomato puree in and cook off, 1-2 mins add 300g rigato in. Add the stock tomatoes in, simmer for 10 mins with the lid on, add your double cream and tear the mozzarella in, add the parmesan.
