Soup season has officially arrived and we are kicking it off with this delicious minestrone soup. Here's what you'll need: - 2 tbsp olive oil - 1 white onion, diced - 2 carrots, diced - 2 stalks of celery, diced - 1 cup of zuchinni, diced - 1 cup of green beans, cut into thirds - 3 cloves of garlic, minced - 1 large jar of diced tomatoes - 4 cups of veggie stock - 2 cups of water - 1 tsp oregano - 1 tsp thyme - 2 bay leaves - 1 box of Chickapea Pasta Elbows or shape of choice - the juice of 1/2 a lemon - salt + pepper to taste 1. Start by heating up olive oil in a large pot and then sauté the onion, carrots, celery, and zucchini for 5-7 minutes over medium-high heat. Season with salt and pepper throughout the cooking proccess. 2. Add in the garlic and green beans and sauté for a few more minutes. 3. Next, add in the can of diced tomatoes, veggie stock, spices, and 2 cups of water. 4. Once the soup is boiling, add in your box of Chickapea Pasta and simmer for 5-7 minutes or until the pasta is cooked through. 5. Once the pasta is cooked, remove the bay leaves and add in a squeeze of lemon and more salt + pepper if needed. Enjoy!
