To say this was phenomenal is an understatement, it was one of the nicest chicken dishes I’ve made🥰 What you need: 6-8 chicken thighs or 4/5 Breasts Paprika 1 Large Shallot 1 Green Chilli 1 Tbsp Minced Garlic 1 Tbsp Minced Ginger 200ml Chicken Stock 400ml Coconut Milk Coconut Cream 1 Tbsp Dark Soy Sauce 1 Tbsp Fish Sauce Coriander Lime What to do: 1. In a large pan heat 1-2 tbsp olive oil, add chicken and season with S&P and paprika. Cook on both sides until golden and remove. 2. Add onion & chilli, cook for 3-5 mins over low heat, mix through ginger, garlic & lime zest and heat for 1-2 mins. 3. Pour in stock and coconut milk & cream(keep some back to top chicken at the end) 4. Mix in soy sauce, add chicken back in, cover and cook for 10-15 mins over low heat until chicken is cooked through & sauce is thickened. 5.
