Vegan Lahmacun 🇹🇷🤤 ⠀ RECIPE (6 portions) Dough: - 300 g all purpose flour - 180 g warm water - 2 tsp dry yeast - 6 g salt - 2 tbsp olive oil ⠀ Filling: - 400 g firm tofu - 1 onion - 1 sweet red pepper - small bunch parsley - 2 garlic cloves - 3 tbsp tomato paste - 2 tbsp Turkish pepper paste - 1 tsp smoked paprika - 1/2 tsp cumin - 1/2 tsp allspice - 1/2 tsp cinnamon - 3 tbsp olive oil - salt to taste ⠀ Optional toppings: - onion - tomato - lettuce - cucumber - parsley - sumac - lemon juice ⠀ ❶ In a bowl mix all ingredients for the dough until no dry spots remain. Let it rest for 5 minutes, then knead briefly and let it rise for about 1-2 hours or place in the fridge to use the next day. ❷ Preheat oven to 250°C. ❸ Crumble tofu, then roughly blend the remaining ingredients for the filling into a paste and mix with the tofu. ❹ Divide the dough into 6 pieces, shape each piece into ball, then set aside to let the dough relax. Cover to prevent from drying out. ❺ Thinly roll out the dough, place on a baking tray, then spread with the filling and bake in the preheated oven for 6-12 minutes until well browned and crispy. ❻ Repeat with each dough ball.
