One of our favorites 🥧 RICOTTA CHEESECAKE🍰 Ingredients for filling: 2 cups ricotta cheese 1/2 cup heavy cream 2 eggs 1 egg yolk 1/3 confectioners sugar Finely grated rind of 1 orange Finely grated rind of 1 lemon Ingredients for Crust: 1 1/2 cup flour 3 tbsp sugar Pinch of salt 8 tablespoon chilled butter, diced 1 egg yolk Directions: 1) Sift the flour, sugar, and salt onto a cold work surface. Make a well in the center and put in the cold diced butter and egg yolk. Gradually incorporate the flour into the butter and egg. 2) press the dough into a 9 inch pan with removable base. Chill the crust for 30 min. 3) preheat the over for 375. In a bowl, add together ricotta, eggs, egg yolk, sugar, and the zest of one orange and lemon. Beat until evenly mixed. 4) Prick the bottom of the crust, line with foil and add beans to keep the crust from lifting when it bakes. Bake for 15min. Let it cool. 5) Add the filling into the crust and bake for 30-35 min.
