Soup weather is the best 🥣🍗🌶️ Ingredients: 1 diced Onion 1 tbsp minced Garlic 1-2 diced Jalapeño (do not include seeds) 3-4 boneless Chicken Thighs (or 2 chicken breasts) 2 tsp Cumin 2 tsp Paprika 1 tsp Garlic Powder 2 tsp Oregano 1 tsp Parsley 2 tbsp Chicken Better than Boullion 1 can Black Beans (rinsed & drained) 1 can Corn (rinsed & drained) 1 can diced Tomatoes 1/2 cup Salsa (optional) Juice of 1/2 Lime Cilantro for garnish Fried Tortilla Strips Salt & Pepper 1. In a large pot, heat 2 tbsp of olive oil over medium heat. Cook chicken for 4-5 minutes on each side. Season both sides with paprika, cumin, salt, and pepper. Remove from the pan and add in the onion, garlic, and jalapeño. Sauté until softened, about 2-3 minutes. 2. Add back the chicken along with 5 cups of water, diced tomatoes, black beans, salsa, corn and chicken. Add in the spices and simmer for 30-45 minutes. 3. Once the chicken is tender, remove from the pot and shred the chicken. Add it back into the pot and squeeze lime juice over the soup. Cook for an additional 5-10 minutes. Make sure to season to taste before serving. 4. For the toppings sprinkle with fried tortilla chips and any additional toppings.
