Recipe below! | High protein, Gluten Free Dressing: 1/2 cup pain full fat greek yogurt (or substitute with vegan sour cream) 1 tbsp of mayo (or substitute with vegan mayo) 1/2 lime juiced 1 tbsp cilantro 1 tsp paprika 1/2 tsp ancho chili powder 1/2 tsp garlic powder 1/4 tsp cumin 1/2 tsp salt 1/4 tsp black pepper 1/4 cup water (add until runny) Chicken: Season with garlic powder, paprika, salt and lime juice Bake or air fry at 425 for 18 minutes or until golden brown Roasted Sweet potato: Season with garlic powder, paprika, salt Bake at 400 for 18-20 minutes or until golden brown Roasted corn: Rinse and drain canned corn, add 1 tbsp of butter or vegan butter, roast in a pan on medium heat until golden brown. Additional Toppings: Romaine lettuce as the base, then add rice (I used Uncle Bens basmati rice, you can make this in 2 minutes), avocado, lime, jalapeño, crispy pita chips (I forgot to add these in the video).
