Sopa de fideo y taquitos dorados ~ Favorite comfort food 🤎 Easy recipe below Taquitos: 2 russet potatoes 1/2 tsp chef merito-Codorniz seasoning 1/2 tsp black pepper Splash of milk 12 corn tortillas Avocado oil to fry taquitos Caldillo sauce: 3 roma tomatoes, cut into quarters 1/2 tbsp chef merito-Codorniz seasoning 1 large garlic clove 1/4 of an onion 1 cup water — 8 oz fideo pasta 2-3 tbsp of olive oil or avocado oil A few slices of onion Handful of cilantro Serrano pepper, cut a slit down the middle 1 tsp salt 5 cups water 1. Boil potatoes in salted water until fork tender. 2. Peel potatoes, place in a large bowl, mash, mix in chef merito seasoning, black pepper and splash of milk. 3. Warm up corn tortillas, add potato filling, roll into taquito shape, optional to secure with toothpick. 4. Shallow fry taquitos until golden brown on all sides, stand taquitos in a bowl lined with paper towels to absorb excess oil. 5. To a blender cup add tomatoes, garlic clove, onion, chef merito seasoning, water. Blend until smooth. Set aside. 6. Heat up a large pot, add olive oil, fry a few pieces of onion, add fideo pasta, toast until golden brown while mixing to keep from burning. Remove onion, pour caldillo sauce, mix. After 30 seconds add 5 cups of water, cilantro bunch, salt and serrano pepper. Cover pot, bring to a slow simmer for about 15-20 minutes or until fideos have cooked through. Taste for salt. 7. Serve your sopita de fideo right away. Top your taquitos with lots of crema and queso.
