Artichoke and asparagus frittata baked in the oven 🌸 Ingredients: 6 eggs 1lb 1/2 - 2lbs baby artichokes 12 oz frozen bag asparagus - fresh 1 bunch 1 pint small container of grape tomatoes 2 garlic cloves 1/2 cup pancetta 2 tablespoons Parmesan cheese Olive oil Directions: 1) clean the artichokes. Shedding all the hard leaves until you get to the soft middle. Slice in quarters and add to water with lemon. 2) Slice the artichoke thinner. Removing any hard leaves. 3) in the same oil that you browned the pancetta. Add the artichokes. Squeeze half a lemon in 1/3 cup water. Add to artichoke. Has to be some water to cook vegetables. Then add asparagus, salt and garlic. 4) lower the flame and let it cook alittle bit. 5) In a glass baking dish Add the grape tomatoes, add salt and olive oil.
