Take four bunches of baby bok choy and cut the ends off. Discard them.
Then dice the box choy leaves into I inch pieces.
Rinse pieces well in a colander as grit gets in between the leaves. Simmer for 8-10 min. in a frying pan with 1/2 cup water.
Add 3 tbs. of roasted sesame oil and sautéed another 3 minutes. Serve with baked tofu and brown rice, or eat alone. Don’t forget the soy sauce!
