MURUKKU (recipe & tips ⬇️) Happy Diwali to all my friends here who are celebrating! 🥳Murukku is one of a must snack on Deepavali so here we are! Usually you can skip a whole bunch of these steps by buying the ready Murukku Mix. But I like to challenge myself by making these from scratch and honestly is not so hard! RECIPE: 1/2 cup urad dal 1/4 cup chana dal 3 cups rice flour 1/2 tsp hing/asofaetida 1/2 tbsp ajwain 1 tbsp sesame seeds 1-2 tsp chilli powder (I’m using AP Masala from @ariakitchenmasalas ) 2 tbsp salt or more if needed 2 tbsp hot oil/butter Hot water as needed Oil for frying STEPS: 1. Roast urad dal until golden, adding chana dal a few minutes before finishing. 2. Blend or grind cooled dal into fine flour. 3. Sift into a bowl, add rice flour, hing, ajwain, sesame seeds, chilli powder, and salt. 4. Mix and add hot butter; rub it into the flour for crispiness 5. Add hot water until a firm yet pliable dough forms. The dough should be neither sticky nor crumbly/dry. 6. Grease your murukku press, and place dough in. 7. Release the dough on parchment paper/banana leaves or back of the ladle. 8. Heat oil, then gently fry murukku until brown and crisp. 9. Cool and enjoy! TIPS: 1. When kneading: if the dough becomes sticky, add a small amount of flour and knead. Conversely, if it’s too dry, add a few drops of water and mix until the desired consistency is achieved. 2. Try a bit of the batter before frying. Adjust salt if needed. 3. Press on the stainless steel ladle for easy oil transfer; pros can press directly into the oil. 4.
