You can listen to Eat a Peach on @Audible , start your 30-day free trial via the link in my bio #audible #samosas #familymeal #recipe Samosas Recipe Ingredients - 250g (8.8 oz) flour - 60g (2.1 oz) ghee, at room temperature - 60ml (2 fl oz) water - salt, to taste - 500g (1.1 lb) diced, cooked potatoes - 150g (5.3 oz) frozen peas - a small handful of coriander, chopped - 1 green chilli, diced - 3 cloves garlic, grated - a small piece of ginger, grated - 1 yellow onion, diced - 1 tsp coriander powder - 1 tsp garam masala - 1 tsp chilli powder - 1 tsp cumin - ½ tsp turmeric - juice of ½ a lemon - oil for frying Method 1. In a bowl, combine 250g flour and a pinch of salt. Add 60g ghee and use your fingers to rub it into the flour until you achieve a sandy consistency. Gradually add 60ml water, mixing until the dough comes together and sticks together. 2. Turn the dough out onto a clean surface and knead for 3-4 minutes, or until it becomes smooth. Place the dough back in the bowl, cover, and let it rest at room temperature for 30 minutes. 3. In a large frying pan over medium-high heat, add a bit of oil and the spices (coriander powder, garam masala, chilli powder, cumin, and turmeric). Toast for 1 minute. Add the diced onion, mix well, and cook for a further 5 minutes. Then add the diced green chilli, grated ginger, and grated garlic. Cook for another minute. 4. Add the cooked potatoes, frozen peas, and chopped coriander to the pan. Mix well. Season with salt to taste. Transfer the mixture to a tray and place in the fridge to cool completely. 5. Divide the dough into 8 equal portions. Roll each portion into a circle and cut in half to create two semicircles. Fold each semicircle in half, joining the two straight edges together and crimping along the edge. 6. Fill the open side of each semicircle with the cooled potato filling. Crimp the open edge closed securely. 7. Heat oil in a deep fryer or large pan to 170°C (338°F). Fry the samosas until golden brown, which should take about 8-10 minutes. Let them cool slightly before serving. Serve your samosas with some Cucumber Mint Raita and enjoy!
