עוגת חצילים מתכון חגיגי לקראת פסח קרב ובא. פרסום במימון מאסטר שף מצרכים: לחצילים הקלויים: 3 חצילים גדולים וקלים שליש כוס שמן זית כפית מלח למילוי: 2 כפות שמן זית בצל לבן גדול גזר גדול 3 גבעולי סלרי + העלים חצי קילו בשר טחון מספר 2 - אונטריב פחית עגבניות איטלקיות חתוך דק 7 שיני שום כפית גדושה מלח חצי כפית פלפל שחור טחון 4 ענפי טימין טרי או כף טימין יבש 4 כוסות מים כוס וחצי אורז פרסי אופן הכנה: מחממים תנור ל-160 מעלות טורבו. מיד פורסים חצילים לאורך בעובי 1 ס״מ ומסדרים במגש מרופד נייר אפייה. משמנים היטב את החצילים וזורים מלח באחידות. מכניסים לתנור למשך 45 דק. במקביל מחממים על אש גבוהה שמן זית במחבת וזורקים פנימה בצל, גזר וגבעולי סלרי חתוכים לקוביות קטנות ושוות. לאחר שהבצל הפך להיות שקוף ומתחיל לקבל צבע זהוב, מוסיפים את הבשר פנימה. צורבים יחד היטב עד לקבלת צבע שחום לבשר, ברגע שהבשר צרוב מוסיפים פחית עגבניות, שיני שום חצויות, מלח, פלפל וטימין. מורידים לאש קטנה לבישול של 15 דק׳. מוסיפים כוס מים ומגבירים לאש בינונית, ברגע שיש בעבוע חזק מוסיפים את האורז ומערבבים היטב. לאחר שהאורז שתה את הנוזלים מכבים את האש ומניחים למילוי לצינון. משמנים סיר בינוני ומרפדים בנייר אפייה. מסדרים את החצילים (לאחר קירור) בסיר לפי הדוגמא בסרטון. רגע לפני שמכניסים את המילוי פנימה, מוסיפים את עלי הסלרי קצוצים דק ו-3 כוסות המים הנותרות מהמתכון. מערבבים היטב ושופכים פנימה על החצילים - לא לפחד אם נוזלים בורחים לכם מחוץ למעגל החצילים זה בסדר סוגרים את החצילים על המילוי, מניחים נייר אפייה מעל וסוגרים בנייר כסף. מכניסים לתנור למשך שעה וחצי. מוכן! נותנים לתבשיל צינון של 30 דק׳ וניתן לאכול. שומרי חג ושבת - מכינים את התבשיל עד הסוף. כשרוצים לחמם מוסיפים 4 כפות מים חמים לדפנות הסיר ומעלים לפלטה של שבת כחצי שעה לפני האוכל. כנ״ל אפשר לחמם על 120 מעלות בתנור. #חציל #מתכון #eggplant

Easy Eggplant Dip I often buy eggplant and then it kind of hangs out in the fridge looking at me for a few days… Here I just split, roast & make this tasty dip. While I use garlic powder, you can also add a clove of fresh garlic & some oregano 3 medium eggplants, halved 3 tablespoons extra-virgin olive oil Kosher salt. Freshly ground black pepper Coarse sea salt 3 tablespoons mayonnaise 1 tablespoon garlic powder 1/2-teaspoon hot paprika Optional: 1 tablespoon red wine vinegar Pita chips 1. Preheat oven to 350F. 2. Roast the eggplant: Arrange the eggplant halves on a half sheet tray & drizzle with the olive oil. Season generously with salt & pepper. Place tray in the oven & roast until completely tender, 45 minutes to 1 hour. 3. Make the dip: Scoop eggplant flesh onto a board & discard the skins. Remove any large chunks of seeds. Drizzle with mayonnaise. Season with sea salt & sprinkle with garlic powder & paprika. Chop eggplant with a knife, folding in the ingredients as you cut. The dip should be chunky. Note: If you like a completely smooth dip, simply puree mix in food processor. If you like your dip a little acidic & punchy, stir in 1 tablespoon red wine vinegar. 4. Serve: spoon into a serving bowl & serve with pita chips or roasted (or raw) vegetables for dipping.
